Winemaker

Many home winemakers dream of turning their passion of wine into a successful business and share their love of great wines with enophiles, but only very few can realize this dream. The challenges of starting and operating a capital-intensive winery, coupled with the risks of crop losses to weather and animals, are strong deterrents. But one's passion can overcome any challenge.

Daniel PambianchiDaniel Pambianchi, President and General Manager of Cadenza Wines Inc.*, has been involved in home winemaking for many years crafting many different styles of wine including traditional method sparkling wine. He is the author of Techniques in Home Winemaking: The Comprehensive Guide to Making Château-Style Wines (Véhicule Press, 2008), and is also a contributing author to WineMaker magazine as well as serving as Technical Editor. Daniel recently made the switch from his telecom-engineering career to found Cadenza Wines and pursue his dream of crafting world-class wines.

History

In January 2004, Daniel and his partners at Cadenza Wines acquired Maleta Vineyards and Estate Winery on Queenston Road in Niagara-on-the-Lake. The vineyard's location and heritage made it desirable as it sits adjacent to what was once the Sunnieholme Winery, founded in 1918, and on what was probably the site of Niagara's first commercial vineyard, developed in the mid 1800s.

Practices & Techniques

Fellow home winemakers, welcome to the fascinating art of home winemaking.

Interest in home winemaking has grown tremendously over the last few years.

With access to many new products and processes, home winemakers are now able to produce high-quality, age-worthy wines. Whether making wine from grapes, juice or even concentrate, we want to be equipped with the knowledge to make the best wines. We want to understand the role of acidity, pH, sulfite, malolactic fermentation, filtering in crafting great wines. We derive great pleasure from our hobby.

Techniques in Home Winemaking: The Comprehensive Guide to Making Château-Style Wines (Véhicule Press, 2008) is an A-to-Z source of home winemaking knowledge, all in a single book. It shares my knowledge and many years of experience to provide you with the best advice and latest information on how to make the best wines. It will help you build confidence in, not only making all types of wines including sparkling wine, but also how to tackle and solve some of the most challenging winemaking problems. This is truly the mark of a great winemaker!

And if you are just starting out in winemaking or want to give kits a try, my other publication Kit Winemaking: The Illustrated Beginner's Guide to Making Wine from Concentrate (Véhicule Press, 2009) will guide you every step of the way each day with detailed instructions and illustrations.

I also have a new book now available, Wine Myths, Facts & Snobberies: 81 Questions & Answers on the Science and Enjoyment of Wine, which deals with many topics around wine, such as wine service, styles, faults, frauds, and health benefits. There are many short anecdotes with a dash of humour to present intriguing facts about wine and debunking myths along the way.

Estate Vineyards / AVA

The sloping land is situated in one of Niagara's warmer mesoclimates, on what was once the shoreline of an ancient lakebed. The hard Haldimand clay soil was reconditioned with organic materials like straw and horse manure and underdrained at every other row of vines.

The vineyard is now planted to traditional Bordeaux reds, i.e., Cabernet Sauvignon, Cabernet Franc and Merlot, for blending into our luscious award-winning Meritage - a wine with a nose full of cassis and blackberry fruit, a satin texture and long, sweet finish. Production also includes Gamay and Riesling from 40-year-old vines as well as Icewine. The 1999 Riesling Reserve Off-Dry won an award in - of all places - Germany, home of the world's most revered Rieslings. Maleta's was the only wine from outside Germany to win an award in the top 50.

To ensure continuing quality, vines are bunch and leaf thinned to yield two tons an acre - a recipe for success but small quantity. Vinification takes place in a pink (yes, pink) Quonset hut that houses the winemaking equipment and a mix of French and American oak barrels.
