“Wine making at Lavina is a dedication to perfection, balance and flavour. We maintain utmost respect for biodiversity and environment, whilst preserving and upholding the understanding and reflection of terroir and regionality in all of our wines.” – Tim Whitrow
Lavina’s winemakers use the newest innovative techniques at an ultra-modern winery to create unique wine styles with focus on perfection, balance and flavour. Lavina’s chief winemaker, Tim, has been handcrafting wine for over 14 years in Australia and Europe and has won awards globally for producing wines harmonized with fruit complexity, structure and elegance.
Sam has been involved in the wine industry for over 15 years and has spent a great deal of this time developing the wine export business, particularly in Asia. Sam has travelled extensively and makes it his utmost priority to develop successful long term relationships with the people he works with. Sam’s role with the business is multifaceted; from sourcing fruit, creating blends, and wine production; to sales, marketing and logistics.
Robin Moody – Executive Company Wine Consultant:
Lavina’s executive company wine consultant Mr Robin Moody began working at Penfolds as assistant to Max Schubert of Grange Hermitage fame in 1969. He went on to become senior winemaker at Penfolds, Wynns and Southcorp. He now runs his own wine consultancy, and travels to Asia regularly.
Practices & Techniques
Before crushing each bunch, the handpicked fruit is individually sorted through by a state of the art French Vaucher Beguet Mistral mechanized sorting table which removes all contamination such as raisins, leaves, stalks, petioles and damaged berries that would usually end up in the ferment. The perfect berries are then cold soaked in open fermenters for one week allowing natural fermentation to begin, before being over seeded with a French yeast strain. Fermentation is completed after two weeks with the wine delicately basket pressed straight to French oak barrels, ensuring no harsh or bitter tannins are extracted from skins or seeds.
Great attention is paid to oak selection from different forests and cooperages to enhance the dimensions and flavour composition of our wines. Our wine is carefully matured and aged in French oak in temperature controlled cellars for over 2 years before bottling.

– Tim Whitrow, Chief Winemaker
At Lavina, we believe in the perfection of fruit as the foundation and cornerstone of great wine. Our dedication to this means we not only harvest from our own vineyards but we also source high quality, premium fruit from select growers in McLaren Vale where site selection, elevation, soil structure, canopy balance and crop load are of absolute priority.
The majority of our premium grapes are produced from 100% biodynamically grown vines that are meticulously managed by expert viticulturists. By eliminating the use of herbicides and pesticides, the soil micro flora and fauna thrive in abundance which increases the natural flavour profile of the fruit.
The fruit from our biodynamic vineyards form the backbone and underlying structure for our super premium wines. As a result our wines show incredibly complex and layered tannin structure, allowing us to create wines that will cellar for decades to come.
