Hinterbrook Winery produces award winning wines at our eco-focused winery. At Hinterbrook, our grapes are handpicked and handsorted, which produces wines that are unsurpassed in quality. We produce premium quality wines, including the unique Franc Blanc, a white produced from the intensely red Cabernet Franc grape.

Natalie can be found doing what she loves to do best – making and enjoying quality wines – and consulting for Hinterbrook Winery. Her appreciation for quality grapes and meticulous attention to quality measures, such as hand harvesting and sorting, precise selections of premium barrels, and other attentions to detail, have produced 28 award winning wines at Hinterbrook in our short history! Natalie's vivacious personality and infectious laughter brings an enjoyable dynamic to our winery.
The ultimate creation of Hinterbrook was inspired by a conversation around the Nickel family table in 2009. It was from that conversation that Phil’s commitment to producing premium wines with the latest technology in an eco-conscious manner began to take shape.
Phil oversees the overall operation and loves meeting with visitors at the winery. The estate has been his family’s home since 1963. The farm has seen many changes in that time, culminating in the creation of the winery.
When you visit, you'll see Phil leading a tour, explaining why we make premium wines, and the importance of renewable energy. You might also see Phil enjoy a glass of our 2011 Cabernet Merlot which is his current favorite.
Charlotte is the person who makes sure that all the details are handled – from the details of the tasting room to harvest dinners to ensuring our guests have the most enjoyable experience in their wine touring day.
Once Charlotte is satisfied that her guests are happy, she'll take a moment for herself with a glass of 2011 Cabernet Franc.
Andrew, Phil and Charlotte's son, likes to say that the world does not need dreamers or doers, but dreamers who do. He is a voracious reader and equal parts scientist and historian. He studied Wine and Viticulture at Niagara College and earned a bachelor’s in history from McMaster.
When you visit us, Andrew will give very detailed answers to questions about wine and viticulture. He's often on a tractor, fixing equipment or watching the weather. After hours, Andrew likes to BBQ and is looking forward to the 2012 Pinot Noir coming out in February/March 2014.
Jaclyn, Phil and Charlotte's daughter, enjoys organizing all the activity surrounding the winery. She is our tasting room manager and organizes all of our schedules and the special events which take place at the winery.
If you need to track us down, Jaclyn is your best bet.
Jaclyn is also very musical and can often be heard performing at our weekend events. In between sets, she takes a break with a glass of her favourite, the 2012 Riesling.

This artisanal approach, combined with the talents of winemaker Natalie Spytkowsky and her Vines to Vintages winemaking team, produces wines that are unsurpassed in quality.
While all of Hinterbrook's wines are premium wines, our best known wine is Franc Blanc, a white wine produced from the intensely red Cabernet Franc grape.
Estate Vineyards / AVA
The Nickel family began farming this land when Phil's father purchased it in 1963. At that time, the farm produced peaches, plums, cherries, pears and Concord grapes. As the property transferred to the next generation, the family planned for the possibility of establishing a winery at Hinterbrook and planted the first Vinifera grapes in 1998.
Phil knows sun plays the ultimate role in his vineyards and proudly says, "Our wines are driven by the sun; we are driven by quality."
From that point on, the winery has accumulated 28 awards across a variety of wines.
