Practices & Techniques
Estate Vineyards / AVA
Margarita Vineyard is the source of Clavo Syrah, Zinfandel, Collusion, Enigma and Dessert Wine. This standout vineyard is the southernmost site in the Paso Robles Appellation. Just 15 miles from the Pacific Ocean, the grapes benefit from a perfect combination of inland warmth and coastal breezes that ensures exquisite flavor, balance and structure. The shallow, well-drained sandy-loam soils intensify the flavor profile. Margarita Vineyard resides in the historic Santa Margarita Ranch, which first had vines planted in 1774 by the Franciscan missionaries.
Hall Vineyards is the source for Clavo Sauvignon Blanc and Grenache Blanc. Located east of Paso Robles on Highway 46, the vineyard is sustainably farmed for quality, not quantity. Canopies are meticulously managed to ensure that the filtered sun matures the grapes to a point of crispness and fruit-forward flavors. Grapes are harvested at early maturity to retain that crispness that is then expressed in the wines. The resulting wine is brisk and refreshing with flavors of apple, pear, pineapple and citrus.
HIDDEN VALLEY VINEYARD
Nestled in the exclusive community of the same name, this vineyard is located on the Westside of 46 between Paso Robles and the Pacific Ocean. The ocean breezes allow the vineyard to cool down after the hot summer days allowing the grapes to develop balance and structure. The linne calodo soils and diverse microclimate allows for magnificent fruit and a fragrant Viognier with honeysuckle and honeydew aromas and soft, creamy citrus flavors.
DAWSON’S CREEK VINEYARD
Established in 2006, this vineyard named for its owners, specializes in Mediterranean varietals. Located in the desirable El Pomar region of Templeton, the heavy clay soils keep the vines moist year round and allow for less irrigation. The grapes are harvested at an early maturity to retain crispness in the wines. The resulting flavors in the Grenache Blanc are apples, pears and carmelized bananas.
