Practices & Techniques
We harvest at night to avoid the high temperatures of the day and the grapes are carefully selected, grape by grape.
The grapes are transported in stainless steel trailers with an air-tight stopper, to avoid environmental contamination and temperature variations.
Energy-saving during the ageing- maceration.
It’s carried out with mechanical harvesters with destemming system.
The unloading is carried out by vibration, slowly falling on the train reception and avoiding the crushing of the grapes.
For the movement of the grapes, must and wine inside the winery, eliminating the traditional use of bombs that damage the fruits.
Wine is produced in french oak vats of 16,000 l. and in concrete tanks of 8000 l. before starting the ageing in new premium french oak.
Estate Vineyards / AVA
Located in Torresalas Land, this vineyard has 23 white grapes varieties and 50 red grapes ones.
Objetive: to analyze the adaptation of each variety to soil and climatic conditions
of the area and to control their oenological potential.
The varieties authorized by Somontano Board Control are grown in different proportions in our vineyards.
For red wines we use:
Tempranillo, Cabernet Sauvignon, Merlot, Syrah, Grenache, Moristel, Parraleta and Pinot Noir varieties.
For white wines we use:
Chardonnay and Gewurztraminer varieties.
