Practices & Techniques

Crush:

We use only grapes grown in Southern Arizona, in the Sonoita AVA, Kansas Settlement and Bowie. We hand sort all of the fruit and destem using an Ometo destemmer. The grapes are pumped via a 4 inch pump to not damage the fruit. The whites are pressed immediately, with the exception of 2 of our wines which are macerated. The reds are foot stomped and macerated for varying times, pressed and aged sur lees in new European Wood barrels.

Bottling:

The Village of Elgin Winery uses an automatic bottling line. We have engineered this line from several pieces. The line is capable of running from 250 to 750 cases of wine per hour. We have converted our closure system to the Stelvin ROPP cap. Our research has shown that this is the best closure for the storage and aging of fine wines. The Tombstone wines use a direct print to glass technology for labeling and the Village of Elgin branded wines use a copper paper label.
