About

Rock Stream wines are hand-crafted from our own grapes. Most of our wines are derived from hybrid and native grapes, although we do have some vinifera varieties. All wines are iniitially fermented in stainless steel and some are successively aged in oak. Fermentations are long and cool to ensure clean, crisp finishes that are sure to impress.

Location Description

Our tasting room is on the corner of Route 14 and Fir Tree Point Road. The location is about 7 miles north of Watkins Glen.

Winemaker

Rock Stream Vineyards is an estate winery owned and operated by Dr. Mark Karasz. Mark is a retired Army Lieutenant Colonel with a PhD in chemistry. A three year tour in Italy inspired him to make wine and Grappa. After returning from Italy, he founded Rock Stream Vineyards and began growing his own grapes and making wine, brandy, Grappa and ports

Practices & Techniques

Wine making at Rock Stream emphasizes quality, not quantity. All grapes are carefully crushed and pressed one ton at a time. After pressing, some skins are saved for Grappa production and the juice is then stored in small stainless steel tanks in preparation for fermentation. Once the yeast is added and fermentation begins, the tank temperature is controlled to prevent off flavors from a hot fermentation. In about 2 weeks fermentation is complete and the wine settles in preparation for filtration and bottling. The whole process takes about two months for white wines. Red wines often require aging in oak for around one year.
