Practices & Techniques

In September 1996 our second vintage was completed the construction of the cellar. We built on the principle of gravity, to avoid the violent transfers grapes. The grapes are delivered directly into the press for Whites and Rosés. For the reds, they are after stalking, paid directly into the tanks through the top of the building. The stainless steel tanks located in the lower level and welcomes the gravity juice from the pressing. Half-buried on a hillside, it has a natural insulation and an air conditioning system. The tanks are individually temperature controlled, while the barrels used for aging of red wine and white enjoy the cool weather.

Wines:

The first wine qualifies for the appellation contrôlée "Côtes de Provence". It is sold under the name "Castle Sarrins". Our white wine is not entitled to the appellation contrôlée because it comes from a single grape variety, Rolle. It's still a great wine, vinified and aged in barrels, sold under the name "The Sarrins" and the name "Vin de pays du Var".

From the first vintage - 1995 - we decided to retain the best part of the production of AOC and only 18,000 bottles of Château Sarrins Rosé 1995 were proposed and 6,000 bottles of red, raised in new barrels were produced. Current production rises to about 60 000 bottles of Rosé, 70%, 10% red and 20% white.
